Fast & Easy Crock Pot Penne Pasta – Meatless Monday

Our entire family loves pasta so I am always looking for a new way to serve it to them. For years I have made crock pot lasagna for them but I have found it takes a bit more time because you have to season and brown your meat first.

I recently whipped up a delicious dish for Meatless Monday and came up with an easy crock pot penne pasta dish. It was originally supposed to be crock pot ziti however the grocery store was out of ziti so we went with penne instead.

Easy-Crock-Pot-Penne-Pasta

Creating this dish is fast and easy but to save yourself some time cleaning up after, you will want to first line your crock pot with a disposable liner

Grab the Ingredients

  • 2 (25 ounce) jars of pasta sauce
  • 15 oz tomato sauce
  • 1 pound UNCOOKED penne (or ziti) pasta
  • 15 oz ricotta cheese
  • 2 eggs
  • ⅓ cup freshly chopped basil
  • 3 cups of Italian blend cheese

Directions

  • In a small bowl, mix the ricotta cheese, eggs and basil until well blended.
  • Next, combine both jars of pasta sauce with the tomato sauce and mix well.
  • Begin layering by first spreading out enough sauce on the bottom to cover the entire area well. Next add a layer or pasta (about 1/3 of box) followed by a layer of the ricotta mixture and then a layer of the Italian cheese.
  • Repeat two more times and then cover the top layer with your remaining sauce and cheese.
  • Cook on high for 3 hours.
  • Serve and enjoy!
